Lime Cilantro Vinaigrette

After a weekend of eating baking cookies, I figured I needed to have something a little more nutritious than another dinner of butter cookies.

I decided to keep it simple with a little salad. Unfortunately, I didn’t have any dressing and after making my own sesame ginger variety, I made a decision to never buy another bottle again.

Right now I’m in a lime phase. After the lime cookies, I want all things lime-flavored. Fortunately for me, I had a few left over from this weekend’s cooking and baking exploits and decided to use them to make a citrusy vinaigrette.

** This isn’t a creamy dressing. It looks that way because I made it entirely in my Ninja. **


Lime Cilantro Vinaigrette
Adapted from Epicurious

2 tablespoons fresh lime juice
1 garlic clove, chopped
1 teaspoon sugar
½ teaspoon Paula Deen House seasoning
¼ teaspoon ground cumin
2 tablespoons oil
2 tablespoons fresh cilantro, chopped

Combine all ingredients in a container and shake to combine.

Food processor instructions:

Add unchopped cilantro and garlic to cup. Pulse a few times to chop. Add remaining ingredients and pulse a few times to combine.
